On New Year’s Day to eat lop cheung is to partake of a long life. Broccoli is a symbol of jade, itself symbolic of good health and youth.

Ingredients

  • 6 pieces of Chinese sausage (lop cheung) Flowers from 1 bunch of broccoli, cut off about 1½ inches from the top

Method

  1. Steam sausage for 20 minutes (see steaming directions).
  2. While sausage is steaming, wash broccoli and drain off excess water. When sausage is thoroughly steamed through, cut it into diagonal slices ⅛ inch thick. Reserve in a preheated serving dish, in a warm oven.
