The kitchen staff loves this dish! No matter how weary our palates get tasting and adjusting all the dozens of things that go by in the course of a working day, the pleasures of chicken, peanuts, and chili are a sure lure to wakefulness. Lunch or dinner, winter or summer, this is one of my personal favorites.
The slicing, mincing, and marinating can all be done ahead. The stir-frying, to be perfect, should be done at the last minute.
