Money imagery abounds in Chinese cooking, where any round, deep-fried or pan-fried patty is automatically saluted as a “gold coin.” Here, then, is edible treasure: a delectable fresh salmon patty that is to my adult tongue what my mother’s canned salmon croquettes were to my childhood palate. Fresh from the skillet, they are equally delicious with the Minted Cucumber Sauce we use in the dining room or the homemade mayo we whip up for staff lunches.
