This is an ideal party appetizer. It is very pretty to look at with its combination of black and white sesame seeds and bright orange sauce, and the contrast of hot fish and cool fruit is wonderful. Look for a firm-fleshed, non-oily white fish. Fresh bass, sole, flounder, and ling cod all work well.

Method

Spread the fish fillet flat and use a sharp knife or cleaver to cut it lengthwise into strips about 2 inches wide. Holding the cleaver on a sharp diagonal to the board, cut each strip crosswise with the grain into broad slices about ⅜
