This, to my tongue, is a perfectly delectable combination of flavors and textures! (When a large color picture of it appeared in The New York Times Magazine, it brought throngs of new customers to the restaurant.)

I particularly love using very thin noodles—they are a beautiful tangle when interwoven with the slivers of lemon zest and bright-colored vegetables—but you might easily substitute most any other size of noodle.
