Ingredients: 1 red onion, cut into ½-inch moons; ¼ pound Napa cabbage, cut into 1-inch squares; 4 to 6 large shiitake or Italian field mushrooms, thinly sliced; Thinly sliced green and white scallion rings, for garnish; 1 package enoki mushrooms, spongy base removed; 2 fat scallions, cut into 1-inch nuggets; 2 to 3 large shallots, halved lengthwise; 1 red (bell) pepper, cut into ¼-inch strips; 1 small green Anaheim chili, seeded and cut into ¼-inch rings; 2 teaspoons finely chopped Chinese chives; 1 tablespoon plus 2 teaspoons soy sauce; 1 teaspoon Freshly ground black pepper; ⅛ teaspoon Roasted Szechwan Pepper-Salt; 1½ teaspoons finely minced garlic; 1 tablespoon coarsely chopped coriander leaves and stems; 3 to 4 yards sheep casings; 1½ teaspoons finely minced fresh ginger; ½ teaspoon dried red chili flakes; 1 pound coarsely ground pork butt; 2 teaspoons Chinese chili sauce; 1½ teaspoons Chinese rice wine or dry sherry; 1½ cups China Moon Infusion, China Moon Double Stock, or unsalted chicken stock; 2 to 3 tablespoons corn or peanut oil, for searing and stir-frying; 1 tablespoon Chinese rice wine or dry sherry; 3 tablespoons mushroom soy sauce; 1 tablespoon balsamic vinegar
