A deep-fried variation on the preceding recipe, this is just one more way to a potato-lover’s heart.

Different potatoes will yield different results. We have excellent luck with a large range of varieties, as long as the potatoes themselves are very small.

The potatoes can be parboiled a day in advance. Fry them just before eating.
