This is a versatile chilli condiment that is excellent to have on hand when you want something brighter and punchier than chilli oil. Try to use a mix of long red chillies and small birdseye chillies. The longer ones have a more vegetal flavour and a mid-level heat, whereas birdseye chillies are spicier. Adjust the ratio to suit your taste.
