This savoury egg custard, or egg tofu, is a fantastic one-person dish. The concept is very simple: whisk an egg with warm chicken stock and a touch of seasoning and cook it very gently. The cooked custard can be dressed simply with a little more soy sauce and sesame oil, or topped with seafood and steamed for a further few minutes. Either way, it’s one of life’s simplest pleasures.
