Another Mexican find from Glen Eastmann and the Four Seasons but this is created with Mexican chocolate. Mexican chocolate is pure ground cocoa straight from the bean with cinnamon and almonds and finally sugar added, so the texture is coarse and sugary and the flavour is much better defined than our chocolate. You should use the strongest couverture you can find.
