“This is one of America’s most popular desserts” says a great friend of mine, Carole Bloom (we met over the Net through our mutual love for chocolate). Carole is a European-trained pastry chef and an authority on chocolate in America. She has also written a chocolate book, which is mentioned in the Bibliography.
