Mole is the black, often fiery, sauce which is traditionally made with chocolate and cocoa as well as some 30 other ingredients including chillies, coriander and cornflour. The mole sauce here, although less complicated, is nevertheless excellent.
Cut away turkey flesh and dice into large pieces and put to one side. Brown the carcass in the oven and put into a stock pot (or similar).
