The history of ice cream dates back thousands of years where it began as a form of sorbet made of snow and honey. While this rich chocolate ice cream bears little resemblance to its humble ancestor, it is just as much of a delicacy. And, unlike the ancient sorbet, this ice cream can be enjoyed even when the snow isn’t falling.

Ingredients

  • 500 ml (16 fl oz) milk
  • ½ vanilla pod, split lengthways

Method

  1. Put the milk, vanilla pod and chopped chocolate in a saucepan and heat slowly until just at boiling point. Remove from the heat. Prepare a large bowl of iced water. Whisk the egg yolks and caster sugar together until thick and pale. Pour in a third of the hot milk, blend and add to the pan with the rest of the milk. Cook over medium heat very slowly, stirring constantl
