These little fritters are crisp on the outside, with a soft, chocolaty filling. They are delicious served hot with vanilla ice cream.

  • 300 g (10 oz) good-quality dark chocolate, chopped

Method

  1. Put the chopped chocolate in a bowl. Half fill a saucepan with water and bring to the boil. Remove from the heat and place the bowl over the pan, making sure it is not touching the water. Leave the chocolate to melt slowly, then remove the bowl from the pan. Heat the cream in a small saucepan until it is just at boiling point. Pour onto the chocolate and whisk until sm
