  • 500 ml (18 fl oz) milk
  • 5 egg yolks

Method

Heat the milk in the pan, but do not allow it to boil.

Beat the egg yolks with the sugar until the mixture is pale and has doubled in volume.

Pour the simmering milk over the egg yolk mixture, stirring constantly.

Return the creamy mixture to a fairly high heat, stirring constantly.

Cook until the mixture thickens sufficiently to coat the back of the spoon and yo
