Slightly more complicated dark chocolate mousse

• 200 g (7 oz) dark chocolate, chopped into small pieces

Melt the chocolate with the butter in a microwave oven or bain-marie. Combine the egg yolks with the crème fraîche, then add the icing sugar. Add the melted chocolate and butter to the mixture and stir well. Whisk the egg whites into very stiff peaks and fold into the chocolate mixture.

Pour the mixture into a bowl of your choice. Chill for at least 2 hours in a refrigerator.
