Some red berry fruits seem to have been invented for chocolate. Raspberries and blackcurrants spring immediately to mind, but try redcurrants, cranberries, bilberries, cherries or blackberries for a change. There’s no need to cook them when they are in season (except for cranberries).

Method

Just serve a few with a gateau, with a dollop of crème fraîche, for example.

When made into a coulis, they add a touch of moisture to a rather dry cake. Out of season, you can find a wide selection of frozen red berry fruits, which are great cooked with just
