Sachertorte (or nearly)

The prince of chocolate cakes! Real Sachertorte has a thin layer of apricot coulis, concealed beneath a perfectly smooth dark chocolate icing bearing the word “Sacher” written in milk chocolate... Unfortunately, the latter two stages are beyond me. I have always found that the apricots are in rather short supply in relation to the copious and extremely rich sponge cake.
