Ingredients: 100 g (4 oz) unsalted butter, melted and cooled again; 1 packet biscuits, e.g. butter thins, crushed; 1 packet biscuits, e.g. butter thins, crushed; 100 g (4 oz) grated coconut; 1 tin sweetened condensed milk; 1 packet pink and white marshmallows; 1 packet pink and white marshmallows; 150 g (5 oz) white chocolate

100 g (4 oz) unsalted butter, melted and cooled again
1 packet biscuits

Method

Mix together all the ingredients except the marshmallows and chocolate and spread out in a Swiss roll tin. Place in a refrigerator.

Dip the scissors in water and cut the marshmallows into pieces, then scatter them over the biscuit mixture. Melt the white chocolate and spread over the marshmallows. Leave to cool for about 1 hour, preferably not in a refrigerator as the humidity may spoil
