Chocolate roulade

I think this is the hardest recipe in the book. It’s not the preparation or the cooking that presents problems, but the rolling-up technique at the end. You are bound to be more dextrous than I am, but read the instructions carefully even so! You will find the result well worth the effort. Once you have mastered the knack, you can combine this wonderful dessert with a whole host of delicious cream fillings, sauces and crispy additions.
