Brownies are an eternal favorite with all ages. They are extremely versatile and can be eaten at any time of the day—they can even be served as the perfect ending to a dinner party, accompanied by vanilla ice cream or cream.

Ingredients

  • 4 oz. dark chocolate (70 percent cocoa solids)
  • 1 stick unsalt

Method

Break the chocolate into pieces and put them in a saucepan. Add the butter and heat gently over very low heat, stirring occasionally, until melted and smooth. Let cool while preparing the rest of the mixture.

Put the eggs and sugar in a large bowl. Cut the vanilla bean in half lengthwise and scrape the seeds into the bowl. Beat with a hand-held electric mixer until thick and creamy.
