A dish that can be prepared well before your guests arrive, a whole poached salmon is a striking centrepiece and is delicious served with potatoes and a green salad.
To make the poaching liquid, place 2litres water, the vegetables, herbs, peppercorns, salt, vinegar and wine in a large pan. Bring to the boil, then reduce the heat and simmer, covered, for 30 minutes. Strain and discard the solids. Leave to cool.
