Ingredients: 1 teaspoon rock salt or sea salt; watercress, to garnish; 1.5-1.75 kg (3-3½ lb) whole fresh salmon, cleaned and scaled (ask your fishmonger to gut the fish and remove the scales); 500 ml (16 fl oz) white wine; 1 bay leaf; 1-2 tablespoons white wine vinegar; 2 telegraph cucumbers, to garnish; 6 peppercorns; 4-5 fresh parsley stalks; sprig of fresh thyme; 2 celery sticks, diced; 1 large carrot, diced; 1 large onion, diced; mayonnaise, to serve

Method

To make the poaching liquid, place 2 litres water, the vegetables, herbs, peppercorns, salt, vinegar and wine in a large pan. Bring to the boil, then reduce the heat and simmer, covered, for 30 minutes. Strain and discard the solids. Leave to cool.
