I love Cornish pasties, more especially as the true pasty doesn’t contain carrots; if it does, it’s not Cornish, as carrots don’t grow well across the Tamar. Potatoes, onions and wurzul (known as turnip) are the real ingredients. My recipe was given to me when I was a law student, by my criminal law tutor Jack Treleven, who was a Druid. Jack used margarine and lard for the pastry but I prefer to use butter and lard.
