My Aberdonian grandmother loved this pudding. (Scotland is, as you probably know, the home of marmalade as we know it.) Tins recipe is also a very good way of using any marmalade that has gone a bit crusty. It is a very simple, quick and scrummy pudding.

Ingredients

  • 350 g plain flour
  • pinch of salt
  • 100 g sugar

Method

Preheat the oven to 200°C/400°F/gas mark 6.

Sift the flour and mix with the salt, sugar, ginger and lemon and orange rind. Mix to a batter with the milk and the egg yolks. Stiffly beat the egg whites and fold into the mixture.
