Evaporated milk is often used in Instant Pot® cooking. I was introduced to canned evaporated milk early in my life in the United States. I use it in a bind, however, I really have a hard time using it in Indian desserts. It is nothing like the rich, creamy, thickened product we get by reducing milk. Thickened milk, or ghono dudh as we call it in Bengali, is the key to making rich Indian sweets. The steady temperature of the Instant Pot® Sauté mode set on medium is higher than what I’d use o
