Sambhar Masala is a very versatile spice blend. It is essential for the South Indian stew called Sambhar but I love using this for all coconut-based stews as well.
Place all the ingredients in a cast iron skillet and toast for about 6 minutes. The spices should be fragrant and a few shades darker. Set aside to cool.
Place the toasted mixture in a spice mill or coffee grinder and grind until smooth. Store in an airtight jar.
