This spice blend is a more aromatic variation of garam masala and is used most frequently for layered rice dishes called biryani, such as my Awadi Gosht Biryani. This variation is my blend and I find it more flavorful than most of those found in supermarkets.


  • teaspoons cumin seeds
  • teaspoons coriander seeds
  • ½ teasp


  1. Place all the ingredients in a heavy-bottomed skillet and toast for 4 to 5 minutes. Set aside to cool.
  2. Grind the toasted mixture to a powder in a spice mill or coffee grinder. Store in an airtight container in a cool dry place.
