I find this tandoori masala to be a very versatile, all-purpose spice blend. It is traditionally used as a rub for grilling or Tandoor-style cooking.

  1. Place the coriander seeds, cumin seeds, dried red chilies, carom seeds, cinnamon sticks, cloves, and cardamom seeds in a skillet and toast for 2 minutes, until fragrant. Set aside to cool.
  2. Grind the toasted mixture to a powder in a spice mill or coffee grinder. Stir in the red chili powder.
  3. Store in an airtight jar and use as needed.
