This cracked wheat pilaf is an easy and nourishing way to start the morning. It offers minerals, proteins, and a good dose of vegetables to get you going. This wholesome dish was often made in the early morning hours in my mother-in-law’s kitchen. Breakfast or nashta is a big deal in North Indian homes, and this is adapted from our family recipe. If you want a gluten-free variation, you can use coarse polenta in place of the wheat for this dish.
