Khaman Dhokla

A dhokla is a savory cake, a signature dish from the western state of Gujarat. The traditional version uses a mixture of rice and lentils that are soaked, ground, and then fermented. The variation given here is often referred to as an instant version as the mixture uses chickpea flour (besan) and fruit salts for creating the leavening effect.
