A dhokla is a savory cake, a signature dish from the western state of Gujarat. The traditional version uses a mixture of rice and lentils that are soaked, ground, and then fermented. The variation given here is often referred to as an instant version as the mixture uses chickpea flour (besan) and fruit salts for creating the leavening effect. To make this dish I use Eno fruit salts, available at Indian grocery stores and many online sights. If you cannot find Eno, a combination of baking so
