This style of stir-frying rice with a few characteristic ingredients such as asafoetida, mustard seeds, and curry leaves is common in Tamil Nadu in South India. This rice dish features various vegetables, is often served alongside plain white rice and vegetables, and can be made with leftover rice, much like Chinese-style fried rice. It’s easy to make in the Instant Pot® though, and its flavor is much deeper too.
