On a chilly New York winter evening, I often crave these extremely simple, smooth, buttery lentils. Indeed, Masoor Dal, as this dish is known on the Bengali table (not to be confused with just the lentil itself), is the ultimate comfort food. While the sautéed onions do need to be done separately and take a little bit of time to assemble, I believe this is well worth the effort.
