This hearty, full-flavored soup hails from the northeastern highlands of India, as well as from the mountain state of Ladakh, which borders Tibet. You can pretty much add any vegetables that catch your fancy. I use an assortment of what I have readily available, and this soup is usually a hit with my family during chilly late winter or early spring evenings in New York.
