This delicate and super-quick cabbage dish from the western state of Maharastra (also known as the “5-Minute Cabbage” in our house) is a very easy and satisfying way to enjoy this vegetable. You do need to remember to soak the split peas, but be sure to use them. In addition to boosting the protein content of this dish, they add a nice texture. Cabbage is a very hardy vegetable and can be kept pre-chopped in the refrigerator for up to a week.
