Whole baby potatoes cooked in a rich gravy to soft and tender perfection is known as Alu Dum. There is, however, no one Alu Dum across the expanse of this wide and diverse country. The Bengali variety in eastern India is spicy with a touch of sweetness. In Kashmir it is redolent with Kashmiri red chilies, and this recipe is one of the ways it is cooked in Benares. I lightened the recipe quite a bit by eliminating a lot of the deep frying. This allows the innate delicate richness of the sauc
