Baigan Bhartha, or any other bhartha, is about vegetables roasted on an open flame to char the outer skin and then peeled and mashed with a few essential spices, raw onions, and green chilies. This yields a smoky, light-tasting dish. Though the Instant Pot® will not give you that smoky taste, you will get a very flavorful, fuss-free eggplant dish that is a good busy weeknight alternative. This version also makes a great dip served with warm flatbreads.
