Steaming chicken or fish is common along the east and northeast of India. The meat or fish is usually wrapped in banana leaves or placed in a bamboo tray, which itself imparts a unique flavor to the food. The forests of northeastern India also offer a prolific assortment of herbs and unique spices. Inspired by the technique and flavor profiles of the region, I created this recipe with readily available ingredients.
