An Indian cookbook would be incomplete without at least one recipe for rice pudding. The more common variety is called kheer or payesam. Phirni is an adaptation made with broken rice which cooks much quicker. It is popular in the Punjabi city of Amritsar and is often served for festive occasions. I have seen modern variations using rice flour, but please do not use that as it does not have the slight grainy texture that is essential for this recipe. I do not use the pressure cooker for this
