Mishti Doi is a signature dish from West Bengal. It is made with thickened milk, flavored with a hint of caramelized sugar, and then set like regular yogurt. The Instant Pot® assures a well-set yogurt that is done in a fuss-free manner. While you can certainly use the method described to make your own evaporated milk, this is one of those desserts where using the canned evaporated milk actually does not impact the taste.
