Poached Apricots with Whipped Cream

This easy and luscious offering is from the southern city of Hyderabad. It is really as simple as it sounds. Fresh apricots are poached in a cardamom-laced syrup and served with whipped cream. Dried apricots can also be used for this recipe; they just need to be stewed a little longer. The desired texture of the fruit is somewhere between a poached fruit and a compote. I like to keep this closer to poached fruit, though traditionally it is stewed and cooked down to compote. The operative wo
