Vermicelli and Date Pudding

This vermicelli pudding, almost as classic as rice pudding, is enjoyed in different forms all over India. Also known as Sheer Korma, it is a signature dessert during the Muslim festival of Eid. Dates are usually a mandatory addition to this dessert. It is not complex, but you do need to reduce the milk, which takes some time although not necessarily much attention.
