Spiced tea holds a very special place on the Indian table. There are many spice blends and variations for this energizing fragrant brew, but this is my version adapted for the Instant Pot®. The preferred tea for making masala chai is a strong black tea such as Assam or Nilgiri. Whole spices are great as they can be strained out, or you can use a tea ball for both the tea and the spices.
