It’s so rare to find a good tomato in the UK that I don’t often cook with them; the tomatoes you buy here are generally far too watery for me and have very little flavour. So this dish is something I prepare when I can buy ripe Italian Roma tomatoes and can be sure of extracting the maximum amount of their sunny flavour without running the risk that too much water will weaken it.
