Late one morning, when I was in Omaha, Nebraska, I wandered into the Garden Café, where a neon sign at the door read: “We Love Food.” Bakery cases were filled with freshly baked cinnamon rolls, pastries and pies. Looking past the counter, I watched two cooks keeping an eye on several pans of omelets and pancakes, giving a quick flip at just the right instant. I knew immediately that I’d found the breakfast hangout of my dreams.
