This recipe is an ingenious adaptation of shoo-fly pie, the Pennsylvania Dutch favorite that has a soft molasses filling and a crumb topping. The moist cake is true to the flavors of the original, but because you don’t have to roll out a crust, you can put it together in the time it takes to preheat the oven. This recipe can be halved and baked in an 8-inch square pan.
