On Fire Island, the highbush blueberries start to pop out in mid-July. You have to know where to look, and even then, after searching patiently, you’re apt to come back with just a tiny bowl of berries. Not enough for a pie, but enough to start a pie. (A handful of berries does good things for a peach or nectarine pie.)

This is a basic formula for a two-crust berry pie; following these amounts, feel free to substitute other berries, or to combine berry varieties. (If you can find th
