Owner David Cohen of the Old Mexico Grill in Santa Fe, New Mexico, says that this outstanding ice cream pie with its Oreo cookie crust is the restaurant’s best-selling dessert. It’s made in a springform pan, filled all the way to the top. At the Old Mexico Grill, the filling is made with chocolate ice cream; I like layers of coffee and vanilla.

The ice cream filling is generously studded with crunchy toffee, homemade by caramelizing sugar with butter (a lot of butter) and the
