This is similar to pecan pie, but the touches of tea and vinegar give it a nice tart edge. The recipe is from the late Regina Menard of Plaisance, Quebec, a cousin of my friend, first-class baker and cook Ruth Cousineau.



  1. Roll out the dough on a lightly floured surface to a large circle about inch thick. Fit it, without stretching, into a buttered 9-inch pie pan. Trim off the excess dough, leaving a
