This recipe is virtually intact from the 1655 original. Fry these fritters carefully, and they’ll come out crisp, greaseless and delicious. Try making them with other fruits, too; just about any fruit works well. Plan to serve them as soon as possible after frying.

Ingredients

  • cup ale or beer
  • 2 large eggs, separated
  • teaspoons

Method

  1. In a small bowl, whisk together the ale or beer, egg yolks, melted butter or oil, sugar, ginger, pumpkin pie spice and salt; whisk in the flour just until blended. Cover the bowl with a kitchen towel and let the batter rest for about ½ hour.
