A recipe to win over anyone intimidated by the mystique of the soufflé myth. These are useful for a supper party as they are very easy to make, requiring about 10 minutes’ absence from the table and a further 10 minutes’ cooking. They have the authentic smack of chocolate truth, underlined by the sympathetic resonance of Grand Marnier. These are made in individual ramekins (200 ml). Use a bigger dish (1.2 litre) if you want, but cook for 20 minutes longer.
